Super Bowl Sunday Great Eats
With the Super Bowl being a week away, you are probably starting to think of a menu to go with the party you are planning. Whether it will be just you watching the big game or a crowd of 30, these recipes and ideas will help to make your party a hit. May the Best Team Win! Enjoy!!
Super Bowl Party Menu:
Slow Cooker Pot Roast Sandwiches

Slow Cooker Pot Roast Sandwiches
Ingredients:
2-2 1/2 lbs Chuck Roast
1 cup beef broth or water
1 packet onion soup mix
Place roast in slow cooker. Mix broth or water with soup mix in a cup (I prefer the measuring cup I used to measure the broth, a 2 cup measuring cup.) Then pour over the roast. Cook on low for 6-7 hours. Shred meat when done with a fork. Then serve on buns. Serves 4-6.
Beef and Onion Sliders -I received this recipe from my friend Jennie. The origin of the recipe is unknown. They taste just like a White Castle Slider.
Ingredients:
1 lb. ground beef
1 tbsp. mayo
1 packet onion soup mix
3/4 cup cheddar cheese, shredded
slices of pickle for each slider
8 hamburger buns or pkg of slider buns (Pepperidge Farm makes them)
Preheat oven to 350 degrees farenheit.
Brown beef in a skillet. Just before the beef is done, add mayo; mix. Then add onion soup mix; mix. Then add cheese and stir. Spoon meat onto buns placed in a 13x9 inch baking dish. Cover with bun tops then cover the dish with foil. Bake 20 min. at 350 degrees farenheit. Then place a pickle slice under the top of each slider. *These would be really good with some brown mustard like the type they use at White Castle.
Asiago Cheese Dip -My friends Monica and Jessica and I made an Asiago Cheese Dip similar to this. The original recipe came from an old newspaper clipping Monica had. It's pretty much the same recipe and so delicious.
Ingredients:
1 cup mayo
1 cup sour cream
3/4 cup shredded Asiago cheese
1/4 cup sundried julienne tomatoes
1/4 cup green onion sliced
1/4 cup mushrooms sliced
Reconstitute sundried tomatoes by placing them in a dish with hot water. Rinse and slice green onions. Clean and slice mushrooms. Squeeze out all of the water from the tomatoes then julienne into fine strips. Combine all the ingredients except the tomatoes and pour in an oven safe dish. Then place tomatoes on top. Bake at 350 degrees farenheit for 15 min. or until bubbly. Serve with sliced french bread.
Taco Dip
Ingredients:
2 cans jalepeno bean dip
1 whole package of pre-made guacamole (Wholly Guacamole Brand is good)
6 tbsp. ranch dressing
1/3 taco seasoning packet
1 lb. Colby Jack cheese
3 small tomatoes; diced
1 small can of black olives; diced
1 small can green chilies; diced
Tortilla Chips
Combine the ranch dressing and taco seasoning mix. Then layer ingredients in the order they are in shown above in a pie dish or a deep round dish. Then drizzle seasoned ranch dressing over it. Refrigerate until ready to serve.
Teryaki Chicken Wings -I received this recipe from my Uncle John.
Ingredients:
5 lbs chicken wings
1 cup brown sugar
2 cloves garlic
1 cup marsalla wine
1 cup soy sauce
1 tsp. dry mustard
Bake wings only for 30 min. at 350 degrees. Drain grease. Combine the rest of the ingredients in sauce pan, simmer for 30 min. Pour over wings and bake for 2 1/2 to 3 hours at 350 degrees farenheit. Turning occasionally.
Chili Dog Nachos
Ingredients:
1 bag of nacho chips
2 cans already made chili
4 beef hotdogs sliced
1 lb bag of cheddar cheese
Place chili and sliced hotdogs in a microwave safe bowl and microwave until hot approximately 2 min. Microwave times may vary though. Place one layer of nacho chips on a large plate that is oven safe, then add a layer of the chili and hotdog mix, then a layer of cheese and continue layering the chips, chili- dogs and cheese until you run out or until it's the size you want. I like to make sure every chip is covered. No one likes a chip without toppings. Then place the plate of nachos in a oven set to broil for approximately 5-10 min. Keep an eye on it though as broilers can burn food quickly. You will know it's done when the cheese becomes melty.
