Kimber's Favorite Fluffy Pancakes

Good Morning and Good Eating! I make these for my daughter who is almost a year old and she LOVES them. I usually double the recipe to feed our family of three, and then I freeze or refrigerate the rest.



Kimber's Favorite Fluffy Pancakes

Ingredients
1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1/4 cup butter, melted

In a small bowl, combine the flour, sugar, baking powder and salt.
In another bowl combine the egg and milk; then slowly stir in the melted butter.
Combine the dry ingredients with the wet ingredients and mix until moistened.
Pour the batter by 1/4 cupful (an icecream scoop works great) onto a greased hot griddle, large frying pan, or the flat side of a grill pan; over medium to low heat.
Turn the pancakes when bubbles form on the top of the pancakes; then cook until the other side becomes golden.
This recipe will make approximately 8 medium sized pancakes.
*Serve with butter, syrup or fresh fruit. You can also add chocolate chips, blueberries or apples with cinnamon to the batter to add a different flavor.
