Garlic Mashed Potatoes

One of my favorites side dishes is mashed potatoes and I always make mine with garlic. This is a simple recipe and very delicious.


Ingredients:
8 small russet potatoes or 4 large russet potatoes
2 tsp. minced garlic
salt to taste
3 tbsp butter
1 cup half and half, or heavy whipping cream

Clean, peel and dice potatoes. Mince garlic.
Place potatoes, garlic and some salt (about a tsp) in a large pot and fill with water til it covers the potatoes.
Bring pot to a boil.
Boil potatoes til tender (approx. 10-15 min.)
Drain potatoes, return to the pot and add butter, cream and a little more salt. Mash together with a potato masher. Serve.
*you can also use a food processor or stand mixer to mash the potatoes. Just add the potatoes to the mixer or processor instead of the pot and continue with the rest of the recipe.
