Supreme Lasagna

This lasagna was inspired by some of my favorite ingredients on a pizza. This lasagna is made with Italian sausage, mushrooms, onions, spinach and lots of cheese! Feel free to add any extra ingredients if you'd like! The flavors go well together and I hope you give this recipe a try! Thanks and Enjoy!!




Ingredients:
-12 sheets of lasagna noodles (you will only use 9, but sometimes they break apart when they are cooking, so I make extra. Plus they are fun to snack on as the lasagna bakes.)
-cooking spray
-1 pound ground mild Italian sausage
-1/2 medium onion finely diced
-1/2 pound cleaned and sliced button mushrooms
-1 jar of Sweet Pepper CalabreseTomato sauce (Barilla makes a good one, if you can't find it any Spaghetti sauce will work)
-2 cups ricotta cheese
-1/2 cup grated parmesan cheese
-1/4 milk or heavy cream
-1 tsp dried oregano
-1 cup packed fresh baby spinach leaves
-1 -16oz bag shredded mozzarella cheese

Directions:
Bring a large pot of water to a boil and cook lasagna according to package directions. Leave pasta a little al dente, because it will continue to cook when you bake the lasagna. *make sure to salt your pasta water!*
When noodles are done, drain the water and lay each noodle on a baking sheet lined with paper towels. Spray each side of the noodles with cooking spray, so they don't stick together. Allow them to cool.
In a large skillet brown the sausage over medium-high heat. Add onion and mushrooms about half way through the cooking and stir together. Finish cooking the sausage until it is completely cooked.
While sausage is cooking, mix together ricotta cheese, parmesan cheese, milk and oregano in a medium sized bowl.
Preheat oven to 375 F. Take a 13x9 inch baking dish and spray with cooking spray, then add 1/3 of the spaghetti sauce to the bottom of the pan. Then line the pan with 3 lasagna noodles. On top of that layer add 1/3 of the ricotta cheese mixture, spooning it and spreading it across each noodle. Next add a layer of the sausage, onions and mushrooms, 1/3 of the mix. Add a layer of spinach leaves, then top with 1/3 of the mozzarella cheese. Repeat these layers 2 more times, until all the ingredients are used up.
*Layers: sauce, noodles, ricotta cheese mix, sausage/veggie mix, spinach, and cheese; repeat.
Then cover the dish with foil and bake for 50-60 min. Halfway through the baking remove the foil and bake uncovered for the remaining time. When finished baking, remove from the oven and allow to cool for 10-15 minutes, then cut into slices and serve with a delicious bread.
