Ginger-Apple Cider Pork Chops and Sweet Potatoes

To me this recipe just screams FALL. The Fall is my favorite time of year. With warm sweaters, warm cider, and a warm comforting meal like this one you will be starting your Fall off the right way.
This recipe came to me as I was looking to make pork chops for dinner in the slow cooker, but didn't want anything plain and boring. I took a look in my pantry and fridge and was able to come up with this fantastic dish that not only sounds delicious, but tastes delicious. I hope you will try this recipe and any of the others on my blog. Enjoy!!
Ingredients
- 2 butterfly pork chops or 4- 1 inch thick boneless pork chops
-2 tbsp butter; divided
-1/2 tsp house seasoning (a mixture of salt, pepper and garlic powder. about 1/4 tsp salt, 1/8 tsp pepper, 1/8 tsp garlic powder)
-2 large sweet potatoes- cleaned, peeled, and diced into large chunks
-1 tsp ground cinnamon
-2 tbsp light brown sugar
-1/4 cup apple cider or juice ( I have also used hard apple cider before with my pork and it's good!)
-1/4 cup of a spicy ginger ale ( I used Goose Islands Spicy Ginger Ale. If you can't find that, Vernors makes a spicy ginger ale or any brand like it. I would imagine diced candied ginger would work well with this too!)
-salt to taste
In a large skillet melt 1 tbsp butter over med- high heat. Season pork chops with house seasoning. Place pork chops in skillet and brown each side (about 2-4 min. each side). Place pork chops in a slow cooker making sure to pour excess drippings in too (that's the good stuff). Cover chops with diced sweet potatoes, then sprinkle with cinnamon and brown sugar. Pour cider and ginger ale over the top. Put lid on slow cooker and cook on low for 5-6 hours. When done, season with a little salt and butter (I just placed the butter on top and it started melting, then I mixed it with the sweet potatoes). Remove pork chops and either serve potatoes on the side diced, or mash them in the crock pot with a little more butter, 2-3 tbsp more, and serve mashed. The juices from the pork, cider and ginger ale will give it a good mashed consistency, probably no need to add milk.
