Portabello, Pepper and Chicken Gravy

I love using leftovers for new dishes. In this recipe I used a leftover chicken breast I had from the night before, and it worked great. Pork or Steak would also be good for this recipe too! Enjoy!




Ingredients:
- 1 chicken breast, cooked and sliced
-3 portabello mushrooms, sliced
-1 small onion, sliced
-1 green pepper, sliced
-2 tbsp. olive oil
- 2 tsp. garlic, minced
-2 tbsp. all purpose flour
-1/4 cup beef broth
-3/4 cup water
- salt and pepper to taste
-brown rice

Directions:
In a large skillet over medium-high heat, heat oil. Add chicken, garlic, mushrooms, and peppers. Cook til chicken is heated through and vegetables are tender about 10-15 minutes. Once vegetables are tender, sprinkle with flour, stir together, then add broth and water. Stir well. Season with salt and pepper. Bring to boil, allow to cook for about 5 minutes. Serve over rice.
