Teriyaki Pork Fried Rice
Teriyaki Pork Fried Rice
This is a simple and healthy meal. When we order Chinese take-out we always have to include a side or fried rice and usually it's bbq pork fried rice. I love the taste of teriyaki and hoisin sauce, which is an asian bbq sauce, so if you would like to substitute the teriyaki sauce in this recipe for hoisin sauce that would be great. And if you don't want any sauce, this dish would still taste great and be less calories. I hope you enjoy this recipe!!
Ingredients:
-3 cups instant whole grain brown rice
-1 1/2 cups water
-1 1/2 cups beef broth
-2 tbsp olive oil, + 1 tbsp reserved
-1 boneless pork chop, diced into tiny bite-size pieces ( I used a leftover pork chop I had from the night before, but I will give instructions for an uncooked porkchop here)
-1/2 cup frozen peas
-1 cup stir fry frozen vegetables ( a mix of broccoli, carrots, waterchestnuts, baby corn, peppers and bean sprouts are okay too)
-2 tbsp low sodium teriyaki sauce/marinade
-2 eggs, lightly beaten
-salt and pepper to taste
Directions:
Cook rice with water and beef broth in a medium pot. Use box directions to help cook the rice.
Take the stir fry vegetables and place in a microwave safe bowl and partially thaw in a microwave. Then take vegetables and dice them into small pieces. In another pan over medium-high heat, heat 2 tbsp oil, add diced pork chop. Halfway through cooking add the stir fry vegetables, peas and teriyaki sauce. Stir and cook together until pork is completely cooked through and vegetables are tender. Turn heat to low and add cooked rice to the pan with the pork and vegetables, stir. Make a well in the center of the pan and add the reserved tablespoon of olive oil, then add the lightly beaten eggs. Allow the eggs to sit in the center and cook for a little bit. You may need to increase the heat of the pan to medium heat, as the egg starts to cook begin to stir the egg into the rest of the ingredients in the pan. As you stir the egg will cook and distribute evenly through all the rice, pork and veggies. When egg starts to look like scrambled bits the dish is done and ready to serve. Season with salt and pepper.
*Serves 4-6
*If you don't have or want to use teriyaki sauce you can use hoisin sauce in place of it or nothing at all.
