Strawberry Paczki
Chocolate Chip Paczki
Paczkis pronounced either poonch-ki, punch-ki or whatever you grew up saying, are traditional Polish pastries that were created before Lent began to help use up some of the decadent ingredients in the house. They are typically eaten on the Fat Tuesday before Ash Wednesday. Most bakeries around where I live in the Chicago area start taking orders for these delicious pastries the month before (they are that good). They sell a variety of paczkis and large orders of them. This year I didn't get to eat any on Fat Tuesday, I was busy making King Cakes and frying up fish. I couldn't take my mind off of those delicious paczkis, so I sat and thought about how I could make them, without all of the work. Sitting there thinking about all the textures and flavors that go into this awesome pastry I finally came up with a recipe, off the top of my head, and got to work creating my own version of a paczki. They are not the traditional paczki, they are semi-homemade. I did not make these from scratch, even better I used a tube of biscuit dough, a tub of cream cheese, a tub of frosting, and a couple other ingredients to create a pretty darn close to the real thing paczki. Traditional Polish paczkis are made with prunes, but now a days they offer a large asssortment of flavors like strawberry, custard, cheese, apricot, apple, raspberry, chocolate chip and so on. My two favorites are strawberry and chocolate chip, so I have included these two flavors in my recipe. If you would like to fill your paczki with a different flavor, then by all means do so. If you have never had a paczki I hope you still give this recipe a try, they are very good with coffee, tea, breakfast, snack or dessert.

Frying the biscuits
Fried biscuits- golden brown
See the gooeyness in the center when I cut it in half. So I placed it back in the oil to finish cooking.
Biscuits halves

Powdered sugar to coat the biscuit halves
Coat the biscuits with powdered sugar
Yum!
Place fillings on the biscuit and top with the other half. Here we have a layer of strawberry cream cheese and strawberries. Eat like a sandwich.
Finished Strawberry
Finished Chocolate Chip
Ingredients:
-1 tube biscuits regular of buttermilk- not the flaky layers kind (about 8 biscuits)
-about 2 cups of vegetable shortening melted
-1/2 cup frozen strawberries with sugar; thawed and drained (save the juice for smoothies, sodas or something else)
-1/2 cup strawberry cream cheese
-1 cup Cool Whip chocolate frosting found next to the Cool Whip in the freezer aisle
-1/4 cup mini chocolate chips
-1 cup powdered sugar
Directions:
Heat oil over medium- high heat in a large skillet with deep sides. Fry biscuits in hot oil until golden brown. Remove and allow to cool on a plate lined with paper towel. When cool, slice biscuits in half. If biscuits are not fully cooked on the inside, place back in the hot oil with the insides down and allow to cook all the way. It should only take about 30 seconds to finish them. Remove and cool. While cooling combine chocolate frosting and mini chocolate chips in a small bowl. Spread the powdered sugar in a pie plate and coat fried biscuits on both sides with powdered sugar. Then spread your fillings on the inside of the biscuit and top with the other half making a sandwich. Finish till all the halves are made.
If making the Strawberry Paczis: Spread a little bit of strawberry cream cheese on both sides of the biscuits, then add a thin layer of the frozen strawberries (about 4 strawberry slices) on one side. Place both halves together to form a sandwich and serve.
If making the Chocolate Chip Paczkis: spread a layer of chocolate frosting with the mini chocolate chips on one half of the fried biscuit then top with the other half and serve. Keep in the refrigerator.
