Turkey Taco Lettuce Wraps

Turkey Taco Lettuce Wraps
by Jennifer Carlisle

These taco lettuce wraps are a healthy alternative to regular flour tortilla tacos. The turkey meat is very flavorful and goes great with the lettuce. I use my own taco seasoning to make the filling, but you can also use a dried mix from the store. Happy Healthy Eating! Enjoy!

Ingredients:
-1 lb. ground turkey
-taco seasoning- 1 tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp dried oregano, 1/2 tsp paprika, 1 1/2 tsp ground cumin, 1 tsp salt, 1 tsp black pepper, 1 tsp crushed red pepper
-1/4 cup water
-1 small onion, diced and divided; reserve 1/2
-4-6 large Romaine lettuce leaves; whole
-1 avocado; sliced with a little bit of lemon or lime juice to prevent browning
-1/2 tomato; diced
- cooking spray

Directions:
Dice onion and tomato. Reserve tomato and half of onion for toppings for the tacos. Slice avocado and add citrus to prevent browning. Heat large skillet, spray with cooking spray. Brown turkey meat with 1/2 of onion and taco seasoning over medium-high heat. Stir well and add water if needed about 1/4 cup. Continue to cook until the turkey is fully cooked. Serve in lettuce leaves with avocado, tomato and onion. Eat like a taco or roll up like a burrito.
