Very Verde Guacamole

A verde salsa and avocadoes make a very green guacamole, hence the name Very Verde Guacamole. Usually when I make a guacamole I like to use colorful tomatoes and onions. This time though, I had some very ripe avocadoes that I didn't want to see go bad, and a jar of verde salsa. With no tomatoes, onions or even a jar of regular salsa, my husband suggested I use the verde salsa instead. At first I was hesitant since I like the chunks of color in my usual guacamole, but then I realized the verde salsa may not add any color to the dip, but it will add great flavor and that is really what I want out of a good guacamole. So I got to work and started making some guacamole. When I finished I realized that I loved the color. It was bright and clean looking and it tasted great. Needless to say we ate the whole bowl within 4 minutes and wanted more. So here is my simple recipe for a fresh and beautiful guacamole.

Ingredients:
-1/4 cup salsa verde in a jar (tomatillo based salsa)
- 4 ripe avocadoes
-juice of 1/2 a lime
-salt to taste



Directions:
Cut open avocadoes, remove pit, and scoop out center with a spoon and place in a bowl. Add salsa and lime juice. With a muddler, masher, or fork smash avocadoes until smooth and combined. Add salt. Serve with chips.

Because my husband and I can finish a bowl of this in less than 5 minutes I should tell you that this recipe can be doubled.
