Chicken Chile Verde

Ingredients:
2 chicken breasts cubed
4 cups of chicken broth low sodium
1 small onion diced
1 green bell pepper diced
1/4 tsp garlic powder
2 tbsp cilantro chopped; divided
1 can green chiles mild
1 large can hominy
1 can corn
Salt - to taste
Pepper - to taste
*Optional queso fresco or sour cream
In a large pot over high heat bring broth, onion, pepper, and chicken breasts to a boil. Reduce heat to simmer. After 30 minutes or until chicken becomes tender add 1 tbsp cilantro, green chiles, hominy, corn, garlic, salt, and pepper and simmer for another 30-45 minutes. When ready to serve top with some freshly chopped cilantro and some crumbled queso fresco or sour cream. I enjoy some sweet corn bread with mine😋 Enjoy!!
